Champagne Beaufort remains a pioneer in ecology and organic viticulture, since the father of the current leader, Jacques Beaufort began to work in organic farming in 1971, eighteen months after being confronted with an allergy to synthetic products. Since then, its six and a half hectares of vineyards – partly in Ambonnay classified Grand Cru on the Montagne de Reims, and in Polisy, in the Aube do not receive any synthetic treatment. The vinifications are made with indigenous yeasts. The new generation has been in charge of Champagne Beaufort since 2007. The wines of Domaine André Beaufort are striking for their fruit, concentration and velvety.
